I’m coming at you today with another Amanda-whipped-up-something-that-barely constitutes-as-a-real-recipe recipe! But isn’t that kind of awesome? That means there are no rules and if I came up with it, you just KNOW it’s going to be a very simple, easy dinner!
We’ve all heard the saying, “when you look good, you feel good.” I pretty much live by those words, and feel every woman should! Sometimes what we consider looking good takes more effort than we care to muster up and today’s world is much more casual than ever before. Exercise wear is worn outside of the gym, jeans are worn in places of worship, and messy top knots have become an actual hairstyle! Now I’m not against or above any of this. I’m definitely guilty of rocking workout leggings to the grocery store and I own an embarrassing amount of denim.
Teacher gifts… Sometimes they can be hard to choose because you want to play it safe and get something generic because you probably don’t know the teacher SUPER well. But at the same time, you want the gift to be personal and to appropriately convey your appreciation.
I can’t even tell you how much I love apple crumble. There’s just something about the warm gooey apples mixed with crunchy crumble topping that makes my mouth very, very happy. And it works out nicely because it’s my guy’s favorite dessert! He could never get sick of me making it!
I made this meal with one guy in mind. No, not my boyfriend but my kid brother. He is super, super picky but I love making new things for him to try. Well, good news… The kid approved which makes this totally kid-friendly!
Well… Here we are. One month away from summer and I could could personally stand to lose a little weight. Salads are a great way to do that, DUHH!
I mean, we all know that salads are great when you’re trying to lose weight but I think that salads are usually SO BORING! I’m here to tell you that they do not have to be. At all!
Even if you’re not trying to lose weight, salads are the best summer dinner. Tell me if you can relate to this. You’re starving, it’s 5:30pm, you need to make something for dinner but your home is so unbelievably hot that turning the oven on is the LAST thing you want to do! I know you’ve been there.
Making fun salads is the best way to keep me motivated when trying to lose weight. I need variety and salads are a healthy way to do that. I LOVE fruit so you will notice a lot of fruit in these salads here. It also helps to curb my ‘need’ for a sweet treat after dinner. Or lunch. Or always. I love sweets… But that’s neither here nor there.
One last thing before we get into it. I’m here to lose weight. Not to starve myself. So I guarantee you that these salads will make for satisfying meals that will leave you full. Having one of these salads will leave your belly and mind happy. It’s like you won’t even realize that these are helping you to lose weight because they’re THAT GOOD!
Breakfast is my least favorite meal of the day. I’m totally one of those people who doesn’t think twice about having a sandwich or something else non-traditionally breakfast as my first meal of the day. I just don’t think it’s the most exciting. So I’m always on the hunt for fun and delicious options to spice this meal up. Boy oh boy have I found it here!
No matter your life situation, the inevitably of overwhelm is there. And I don’t know about you, but overwhelm and stress had pretty much always gone hand-in-hand for me. I have so missed cooking as I haven’t been doing much of it lately. Life was weird for the past few months but I am back with a vengeance and the kitchen is my happy place. I came across this Prosciutto Brie Tart on Pinterest and my first thought was “OMG how yumm!” My second thought was “Merp. Too fancy for me.”
My happy place is a white sandy beach, clear turquoise waters and unlimited margaritas. And nachos. Going on nice, hot beach vacations is definitely a luxury that me and my guy indulge in on almost a yearly basis. We certainly have to make other sacrifices throughout the year to accommodate this splurge but that week of paradise is so worth it! Over the years I’ve seriously fine-tuned our packing to a science.
