Let me start off by saying here that Cheesecake ice cream isn’t my favorite but it is my guy’s. Spoiler alert: he loved it and I really liked it! I wanted to make this because I wanted to have a go at homemade ice cream. I don’t have an ice cream maker and I don’t really have the desire to get one. At least not until we buy a bigger home with a bigger kitchen with more cupboard space and room for a deep freezer… End rant. I really do love our cozy condo but I could use a MUCH bigger kitchen…
Anyway… Back to the cheesecake ice cream. This was so easy to make with pantry-staple items. I was intimidated by homemade ice cream recipes before I actually took the time to review a recipe and saw how easy it really is to make ice cream without an ice cream maker. Side note: sweetened condensed milk is so. dang. good. I could eat it by the spoonful if I was unaware of how indulgent it really is.
I got this awesome idea from Laurient of To The Altar & After to create a long term goal list of 101 things to accomplish in 1001 days. I have a mile-a-minute kind of brain so without lists and my planner, (I’m a slave to it) I’d be lost. Reading Laurient’s post made me realize a solution to a problem I didn’t even realize I had. That problem is that there are many things (big and small) that I want to do, accomplish and learn but I hadn’t documented them. These aren’t necessarily things that would go in to my daily planner and I don’t keep a long term goal list because I feel it would be discombobulated. How fun is the word “discombobulated,” by the way? Enter: the 101 in 1001 list! I think the whole point of this goal list is for it to essentially be a brain dump of wants and goals.
I’m going to have to take Laurient’s lead here and sub-categorize this list. Let’s not get TOO carried away with the discombobulation here! Organization is sexy. You’ll definitely want to check out Laurient’s 101 in 1001 post to see what she’s accomplished so far! Side note: this took me 2 weeks to get 101. I thought it would be way easier to think of 101 semi-long term goals.
My two favourite treats are ice cream and fresh, warm chewy cookies. There is not much in life that a fresh baked warm ooey gooey chocolate chip cookie can’t make a little bit better. Given that, and the fact that one of my favourite candies are M&M’s, I just knew there was going to be no losing with this recipe. When I came across this recipe from Chew Out Loud, I was looking for a treat to bring to a work picnic. I commute on the train so it needed to be portable and super easy to eat while sitting on a picnic blanket.
I love me a good beef dip and fries but never thought to make it at home. I’m not sure why, because it’s pretty easy and takes some pretty straight forward ingredients. I was happy to come across this recipe for “Crazy Tender Slow Cooker French Dip Sandwiches.” To be honest, it’s the photo that really got me. Soft bread soggy from perfectly seasoned au jus topped with tender beef and melty cheese… Man, that’s the stuff dreams are made of. That’s what Hilary Duff was REALLY singing about in that song. It doesn’t look like much but it tastes like comfort and goodness. Man oh man I could really go for some of this beef dip right now…
I love Asian cuisine and love finding ways to easily recreate those dishes at home. I love it, even more, when I realize these dishes can be made quick, easy and healthy. I like a bit of a kick in the mouth so this Szechuan Shrimp and Broccoli recipe (from www.peasandcrayons.com) with Sriracha and red pepper flakes appealed to me. Let me tell yea, it did not disappoint! Bonus points for delicious leftovers for lunch the next day!
I love sweet chicken dishes. Teriyaki, honey garlic, sweet balsamic glaze, orange chicken… I love it all! I also love the addition of peanut flavor that you can often find in Thai cuisine. Given this background info, it should come to no surprise that I was really excited to try The Fit Housewife’sPeanut Butter and Honey Chicken.
