Breakfast is my least favorite meal of the day. I’m totally one of those people who doesn’t think twice about having a sandwich or something else non-traditionally breakfast as my first meal of the day. I just don’t think it’s the most exciting. So I’m always on the hunt for fun and delicious options to spice this meal up. Boy oh boy have I found it here!
This cantaloupe breakfast parfait not only tastes amazing, it just looks really awesome. Though I definitely am not one of those fancy people that thinks ‘presentation is everything’ (taste is EV-ER-Y-THING!) I can totally appreciate a nice looking dish.
Fruit, yogurt and granola is one of my favorite things to have for breakfast but it was just getting so boring. I remembered seeing a Pin awhile awhile ago of some sort of parfait in a cantaloupe and I was inspired! Plus, I had cantaloupe on hand from my Prosciutto Brie Tart so it was perfect!
This recipe is barely even a ‘recipe’. Basically… Put some yogurt and whatever the heck you want in half of a cantaloupe!
But to be somewhat helpful, I’ll let you know how I make it! But seriously. Feel free to swap out any of the toppings or even the kind of yogurt.
You will need:
- 1/2 seeded cantaloupe
- 3/4 cup plain 0% Greek yogurt
- 1/4 cup granola
- fruit-I used cherries and strawberries
- 1/2 tsp chia seeds
- 1 chopped mint leaf
- drizzle of honey
There you have it. This is now my go to weekend breakfast and I’m seriously obsessed. Oh, and in case you were wondering… Yea, you are totally supposed to eat the cantaloupe!!
