I’m coming at you today with another Amanda-whipped-up-something-that-barely constitutes-as-a-real-recipe recipe! But isn’t that kind of awesome? That means there are no rules and if I came up with it, you just KNOW it’s going to be a very simple, easy dinner!
I can’t even tell you how much I love apple crumble. There’s just something about the warm gooey apples mixed with crunchy crumble topping that makes my mouth very, very happy. And it works out nicely because it’s my guy’s favorite dessert! He could never get sick of me making it!
I made this meal with one guy in mind. No, not my boyfriend but my kid brother. He is super, super picky but I love making new things for him to try. Well, good news… The kid approved which makes this totally kid-friendly!
Well… Here we are. One month away from summer and I could could personally stand to lose a little weight. Salads are a great way to do that, DUHH!
I mean, we all know that salads are great when you’re trying to lose weight but I think that salads are usually SO BORING! I’m here to tell you that they do not have to be. At all!
Even if you’re not trying to lose weight, salads are the best summer dinner. Tell me if you can relate to this. You’re starving, it’s 5:30pm, you need to make something for dinner but your home is so unbelievably hot that turning the oven on is the LAST thing you want to do! I know you’ve been there.
Making fun salads is the best way to keep me motivated when trying to lose weight. I need variety and salads are a healthy way to do that. I LOVE fruit so you will notice a lot of fruit in these salads here. It also helps to curb my ‘need’ for a sweet treat after dinner. Or lunch. Or always. I love sweets… But that’s neither here nor there.
One last thing before we get into it. I’m here to lose weight. Not to starve myself. So I guarantee you that these salads will make for satisfying meals that will leave you full. Having one of these salads will leave your belly and mind happy. It’s like you won’t even realize that these are helping you to lose weight because they’re THAT GOOD!
Breakfast is my least favorite meal of the day. I’m totally one of those people who doesn’t think twice about having a sandwich or something else non-traditionally breakfast as my first meal of the day. I just don’t think it’s the most exciting. Freezer meals are so amazing because they’re so dang easy. Spend some extra time cooking when you have the time to save you in those evenings when you have NO time. Not only does freezer meal cooking save you a lot of time, it saves you a lot of money. A lot of times, freezer cooking actually takes NO extra time if you’re just making a double batch of what’s already for dinner and freezing half!

Mmmmmmm Mozzarella Sticks yummmmmmmmmmm. Cheese and bread and butter and ranch and marinara. See how I’m finding it tough to actually compose proper sentences about this appetizer? That’s because to me, Mozzarella Sticks are too good for words. The recipe that I have to share with you today is a bit different than your typical panko crusted mozzarella stick that you might be used. In fact, maybe referring to them as Pizza Sticks rather than Mozzarella Sticks may be more accurate of a description. Either way, they’re amazing. A hybrid, if you will. The best past is that they require 4 ingredients (yea you read that right) and take about 5 minutes to prepare. When I am cooking with the oven I like to play a little game with myself called “Can I Beat the Pre-Heat?” and I challenge myself to get all my prep done before my oven preheats. This recipe was a rare occasion when I Beat the Pre-Heat! Woohoo!
I made this appetizer for a girl’s night (and my guy tried some too) and we absolutely loved them. This recipe is a new favorite and has immediately become a staple as a quick appie to whip up when I have people coming over but no time to cook an elaborate dip or something of the nature.
