Well… Here we are. One month away from summer and I could could personally stand to lose a little weight. Salads are a great way to do that, DUHH!

I mean, we all know that salads are great when you’re trying to lose weight but I think that salads are usually SO BORING! I’m here to tell you that they do not have to be. At all!

Even if you’re not trying to lose weight, salads are the best summer dinner. Tell me if you can relate to this. You’re starving, it’s 5:30pm, you need to make something for dinner but your home is so unbelievably hot that turning the oven on is the LAST thing you want to do! I know you’ve been there.

Making fun salads is the best way to keep me motivated when trying to lose weight. I need variety and salads are a healthy way to do that. I LOVE fruit so you will notice a lot of fruit in these salads here. It also helps to curb my ‘need’ for a sweet treat after dinner. Or lunch. Or always. I love sweets… But that’s neither here nor there.

One last thing before we get into it. I’m here to lose weight. Not to starve myself. So I guarantee you that these salads will make for satisfying meals that will leave you full. Having one of these salads will leave your belly and mind happy. It’s like you won’t even realize that these are helping you to lose weight because they’re THAT GOOD!

Apple Cranberry Turkey Meatballs

Christmas/Thanksgiving Turkey Dinner (they’re essentially the same in my house except for the fact that Christmas has more cookies) is basically the best meal ever. I wish it were practical to have this meal once a month but that’s not realistic because of the time commitment and the gluttony! Actually, even if I could have this meal everyday, I would probably not choose to because some things should be kept sacred. I don’t feel the same way about restricting Christmas decor or music to the month of December (as I listen to Under the Mistletoe on November 7th). These meatballs have all the festive flavors that will satiate your “Christmas dinner” craving but will take about 1/12 the amount of time/effort.

I served these turkey meatballs with boxed stuffing (it’s okay…) and some carrots for a well rounded festive tasting meal without the effort or time commitment. Plus, they’re pretty dang healthy so if you were to skip the stuffing and serve with something less guilty, you’d be off to the races with a very healthy meal. I’m taking some leftover meatballs (#TeamLeftovers) to work today and I’m pretty dang excited about it. My meal last night was delicious and somewhat indulgent with the stuffing but here we are on Monday and I’m ready for some healthier meals so these meatballs alongside a salad is perfect!

I made a big change to the sauce recipe that I think was a really good call so please read below for a tip to make this recipe that much better. Well, better is a stretch. It’s all about preference. As I write this I’m thinking about how awesome these would be to serve alongside some sweet potato cubes or mash for a healthier alternative. Next time!

High Protein Chocolate Peanut Butter Cookies

Let me preface this post by saying that these cookies will not do the trick if you’re dealing with a crisis. If you’re going through a break-up or work drama or are having an indulgent girls night, DO NOT MAKE THESE COOKIES. These cookies are for after the break-up when you’re ready to pick yourself up and show him what he’s missing and get in the best shape of your life! I’m going to be honest and tell you that I don’t eat these but rather make them for my boyfriend and he enjoys them. He works out and wants to make sure he’s getting in enough protein in the day. I don’t work out. I should start… But that’s neither here nor there!

I like this recipe because it’s super simple and quick to whip up. I also love that I’m able to make something for him with all ingredients I’m familiar with that he can eat in place of something packaged and full of preservatives. Plus, he enjoys them. Probably not quite as much as my gooey chocolate chip cookies, but he does like them!

I can’t sing the praises of this dish enough. Now, I will say that I wasn’t overly excited to make it because I really doesn’t look like much. I expected that this would be a good Monday night meal after a weekend of too much over indulging. While that is true-it’s super healthy-what I didn’t expect was to love it so much. Since I’ve had this recipe, I’ve found myself craving it even when I’m not necessarily looking for something healthy because I feel like I have to. This is one of the few recipes that is going to make it into my monthly (I love trying out new recipes way too much to have anything on a weekly basis) rotation.

It’s healthy, amazingly delicious and you can easily customize it to accommodate whatever produce you have on hand. Nothing I love more than a use-up-all-the-crap-in-your-fridge-that-you-almost-have-to-toss meal. Oh, and how could I forget to mention how quickly and easily this all comes together? Read on for my tips to see what makes this already amazing recipe that much better. Andddddd it’s gluten-free. I don’t follow a gluten free diet but I can appreciate recipes that are gluten free and the heavy food coma feeling I’m left without.

These Burritos are my boyfriend’s death row meal. This is his favorite meal that I make and I make this dinner more often than any other meal. It’s rare that I repeat a meal more than once a month. The best part about this meal is that it is so quick and easy to prepare and the ingredients are cheap. Aside from the tortillas (feel free to swap out for whole wheat), light sour cream and some cheese, these guys are made with mostly good-for-you ingredients but taste like a total cheat.

Instant Gratification — we all want it. One of the areas that this is most sought after for a lot of people is weight loss.
