I made this meal with one guy in mind. No, not my boyfriend but my kid brother. He is super, super picky but I love making new things for him to try. Well, good news… The kid approved which makes this totally kid-friendly!

I mean, how could he not. I can’t see even the most pickiest eater not liking this dish. Who doesn’t love potatoes, chicken, cheese or bacon?!

I like all kinds of foods and will gladly eat anything but I think a good ol’ home cooked casserole is up there on my favorites list. Especially if it’s made by my mom! I actually made this for her instead of the other way around. It was a family favorite hit.

Nothing makes me happier than when I make something that my guests love. Especially when among those guests is my little picky eater kid brother, making this an official kid-friendly meal!

This casserole is not only SUPER easy to make and comes together in, like, no time at all… It’s delicious. AND it makes for awesome leftovers. I love when a meal can easily make leftovers for work lunches. I’m a busy gal on a budget so that means I REALLY appreciate when my next 3 lunches look like taking 30 seconds to scoop into tupperware!

Speaking of budget, this recipe is super budget-friendly and requires only ingredients that are very much so readily available. In fact, I’d be shocked if you didn’t already have everything on hand to make this dish for dinner tonight!!

How I strayed from the recipe:

  • I used 6 pieces of regular bacon rather than Canadian bacon.
  • 2% + 2 tsp of cornstarch instead of whole milk.
  • I added my scallions after baking. I prefer them raw but I know it would be less kid-friendly to bake them right into the dish.
  • I also added fresh diced tomatoes and some sour cream.

What I would do differently next time:

More bacon. Always more bacon.

Notes:

I doubled the recipe and it was perfect for 4 people + 3 small leftover meals.

Is this recipe making it in to my recipe binder? Yes, especially since the kiddo liked it!
