Well… Here we are. One month away from summer and I could could personally stand to lose a little weight. Salads are a great way to do that, DUHH!
I mean, we all know that salads are great when you’re trying to lose weight but I think that salads are usually SO BORING! I’m here to tell you that they do not have to be. At all!
Even if you’re not trying to lose weight, salads are the best summer dinner. Tell me if you can relate to this. You’re starving, it’s 5:30pm, you need to make something for dinner but your home is so unbelievably hot that turning the oven on is the LAST thing you want to do! I know you’ve been there.
Making fun salads is the best way to keep me motivated when trying to lose weight. I need variety and salads are a healthy way to do that. I LOVE fruit so you will notice a lot of fruit in these salads here. It also helps to curb my ‘need’ for a sweet treat after dinner. Or lunch. Or always. I love sweets… But that’s neither here nor there.
One last thing before we get into it. I’m here to lose weight. Not to starve myself. So I guarantee you that these salads will make for satisfying meals that will leave you full. Having one of these salads will leave your belly and mind happy. It’s like you won’t even realize that these are helping you to lose weight because they’re THAT GOOD!
No Mayo Broccoli Salad with Blueberries and Apple
What I love most about this salad is that it’s not primarily lettuce. Broccoli is so much more filling. And flavorful. Sorry lettuce. I still like you but I like a lot of your green veggie cousins better!

Apple Brie Salad
Apple + brie anything is my favorite. No seriously. If apple + brie ANYTHING is on a menu anywhere, there’s a 96% chance that that’s what I’ll choose. I’m kicking myself for not having any brie on hand in my fridge right now because if I did, this is what I would be having for dinner!

Honey Lemon Vinaigrette on Peach Bacon Salad
You had me at ‘bacon’. Then you had me again at ‘peach’. Again at ‘honey’. And one final time at ‘lemon’. Peaches are FINALLY starting to come into season and I will be spending the next 3 months coming up with any excuse to incorporate them into my cooking.

Kale Caesar Salad
Everyone loves a good caesar salad, right? Now, I don’t dislike lettuce… I just think kale is much more flavorful and it has WAY more health benefits. This is seriously taking a classic to the next level! You could make a full meal out of this by adding chicken, shrimp, or even salmon.

Cantaloupe and Mozzarella Caprese Salad
I haven’t always liked cantaloupe. It’s not that I didn’t like it, I just thought it was so boring and would never reach for it. But now… NOW! Things have changed. Either I changed or cantaloupe has changed. Either way, I’ve become obsessed over the past few weeks. And… Is that prosciutto I see?!?! My fav!
